For me, they are whichever I imagine them to be. Chizuru is definitely a lesbian though and Soi fon might be. Unless it's stated in canon, I guess they can be whatever one see's within the dynamics between 2 or more characters, which is probably why I have straight, gay, and lesbian pairing and some are intermingled.
